Grilled Yellow Squash Pizza

Who knew that those adorable little healthy yellow squash could double as a pizza crust? We did! It's the perfect way to healthify the world's most ubiquitously popular junk food. Now pizza can be totally delicious and absolutely nutritious too!
Grilled Yellow Squash Pizzas are also a great way to get your kids to eat their veggies. You could have a variety of topping choices, (we've recommended a few of our favourites here), and let your family design their own pizzas. Before you know it, your kids will be happily munching their veggies, and begging for more. These pizza's are simple, healthy and are sure to be a family favourite in no time!

Ingredients
- 4 yellow squash, sliced 1/2 inch thick, horizontally
- 2 tsp. olive oil
- salt and pepper to taste
- 12-14 cherry tomatoes, halved
- 3 tsp. olive oil
- salt and pepper to taste
- 1 tsp. honey or maple syrup
- 2 cloves garlic, grated or minced
- 4 T. fresh basil
- 1 C. grated cheddar cheese, or vegan cheese
- 1 capsicum, sliced thinly
- 1/2 onion, sliced thinly
- 12 Kalamata olives, sliced
Instructions
- Brush sliced squash with olive oil, and season well with salt and pepper. Toss on a hot grill and cook until the underside is golden brown and the squash begins to soften. Use a fork to flip squash over, top with cheddar cheese, or vegan cheese of your choice, and continue cooking until both sides are golden brown and the cheese melts. Set aside.
- Make a quick pan sauce for your pizzas by adding the tomatoes, 3 tsp. olive oil, salt and pepper, garlic, and basil to a hot saute pan. cook until hot and bubbly, and the tomatoes begin to break down.
- Assemble your pizzas by topping the grilled yellow squash crusts with your favourite toppings. Give capsicum, onion and Kalamata olives a try.
