Grilled Yellow Squash Pizza Recipe

Ingredients
4 yellow squash, sliced 1/2 inch thick, horizontally
2 tsp. olive oil
salt and pepper to taste
12-14 cherry tomatoes, halved
3 tsp. olive oil
salt and pepper to taste
1 tsp. maple syrup
2 cloves garlic, grated or minced
4 T. fresh basil
1 C. grated cheddar cheese, or vegan cheese
1 capsicum, sliced thinly
1/2 onion, sliced thinly
12 Kalamata olives, sliced
Method
Brush sliced squash with olive oil, and season well with salt and pepper. Toss on a hot grill and cook until underside is golden brown and the squash begins to soften. Use a fork to flip squash over, top with cheddar cheese, or vegan cheese of your choice, and continue cooking until both sides are golden brown and the cheese melts. Set aside.
