Berry Blast Vegan Overnight Oats

We love oats!
Honestly, what could be more hearty, satisfying, healthy and homey, than oatmeal for brekkie? The only thing we can think of that's even better than oats for breakfast, is oats that are ready to eat as soon as you wake up! It's so easy to throw these simple ingredients in a bowl the night before, and the only cooking instructions for these oats is to get a good night's sleep.
Dump, stir, chill, sleep, eat...heaven! Hooray for our Berry Blast Vegan Overnight Oats!

Ingredients
2 C. rolled oats
1/4 C. chia seeds
2 C. non-dairy milk, (coconut, oat, and almond are great!)
1 T. cinnamon
1 tsp. cardamom
1 tsp. pure vanilla extract
3 T. honey or pure maple syrup
1 C. diced strawberries
1 C. blueberries
1/2 C. chopped walnuts
Instructions
- Combine oats, chia seeds, milk, cinnamon, cardamom, vanilla, and honey or syrup in a large bowl. Stir, cover, and place in the refrigerator overnight.
- In the morning, or when you are ready to serve, give the oats a stir, loosen with a little more milk if it is too thick, and spoon into individual bowls.
- Top the oats with berries and walnuts, and a drizzle more of honey or maple syrup.
Tips
This is one of our favourite ways to prepare overnight oats, but this basic recipe can be changed in 100 different ways to fit your mood, or what's in your refrigerator. You could add raisins or dried cranberries, pecans or sunflower seeds, or even make them savory oats with a little sauteed spinach or kale and some Sriracha sauce!
