Avocado and Pepita Salad: My Go To Magnesium Boost

Recently I have been paying closer attention to magnesium. I noticed I was feeling more tired than usual, not sleeping as deeply, and even getting those little muscle twitches when life was stressful. It made me curious, so I started looking into it, and what I found was eye opening.

Magnesium is one of those quiet minerals that does not get much attention but it is involved in over 300 processes in the body. It supports everything from energy production and muscle relaxation to mood and bone strength. When you have enough, you feel calmer, stronger, and more balanced. When you do not, it can leave you flat and restless.

The wonderful thing is that nature has already given us all we need in the foods we eat. Which is why I have been leaning into simple, nourishing recipes like this one.


My Avocado and Pepita Salad

Avocados have always been a favourite in my kitchen. Lately I love them even more knowing they are rich in magnesium. Paired with pepitas, fresh greens, and a zesty lime dressing, this salad feels like a small gift to my body when I need an easy reset.

Serves 2 to 3 as a side, or 1 to 2 as a light lunch

Ingredients

  • 2 ripe avocados, sliced

  • 2 cups baby spinach or rocket

  • ½ cup cucumber, thinly sliced

  • ¼ cup berries, finely sliced

  • ¼ cup pepitas, lightly toasted

  • Small handful fresh coriander or parsley, chopped

  • Optional: a sprinkle of feta

Dressing

  • Juice of 1 lime or lemon

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon honey or maple syrup

  • Pinch of sea salt and black pepper

Method

  1. Toast pepitas in a dry pan until golden and popping, then set aside to cool.

  2. Combine spinach, cucumber, berries, and herbs in a bowl.

  3. Gently fold through avocado slices.

  4. Whisk dressing ingredients and drizzle over the salad.

  5. Scatter pepitas on top and finish with feta if you like.


Why I love it

This salad is more than just a quick meal. It feels like a little recharge for my body and mind. After a busy day, I can make it in under ten minutes and know I am fuelling myself with food that truly supports my health.
